Who even needs 2Gbps in a home setting? What do you need to stream 4K video on 80 devices at one time?

really really fast download speeds and amazing latency for gaming are primary things I see consumers looking at

Latency really has nothing to do with bandwidth.

You are right. I assumed that it would have great latency too when theoretically it might not. Apologize for that oversight on my end.
