I have a beaglebone black.

I've done a few things with it, such as set up a web server, or making a metronome. Nothing super cool, though.

I also have a collection of Arduinos. Esplora, Due, and a Duemillanove. Nothing super special with those either.

I made a robot using a SUPER ancient BASIC Stamp once. That was pretty cool.

I used a beaglebone black + LCD4 to make a USB -> N64 / Gamecube adapter.
